Breakfast Cookies
Instructions
  1. Preheat oven to 350F. Line cookie sheets with parchment paper.
  2. In a small bowl, combine ground flax with chia seeds & warm water. Stir & set aside.
  3. In a medium bowl, combine flours, baking soda, baking powder, xantham gum and salt. Whisk well.
  4. In the bowl of an electric mixer, beat oils until creamy. Add Sugars & Vanilla, beat well.
  5. Add flax mixture, and beat until thoroughly combined.
  6. Add flour mixture to oil mixture and stir well.
  7. Add the oats, dried fruit, pepitas, hemp hearts, and chocolate chips, if using. Stir until mixture looks uniform.
  8. Use a 1/4 cup measure to scoop cookie dough onto prepared baking sheets. Ensure cookies have room to expand - I did 6 cookies per sheet, staggered.
  9. Bake in preheated oven for 10 - 12 minutes, or until golden around the edges. Allow to cook on cookie sheet for 5 minutes, before placing on wire racks to cool completely.
