Almond Cookies
These tasty cookies are satisfying & protein rich!
  1. Preheat oven to 350F. In a small bowl, combine flours, baking soda & salt. Whisk until well combined, and set aside. In an electric mixer, beat almond butter with both sugars, vanilla extract, almond extract and applesauce. Stir in flour mixture. Roll into 3/4 inch balls and flatten with a fork. Place on parchment lined cookie sheet. Bake in preheated oven for 8 - 9 minutes. Remove & allow to cool on the pan for 5 minutes. Cool completely on a wire rack.
