2 tsp sunflower oil
1⁄2 head cauliflower florets, cut small
2 coloured peppers, sliced in strips
1 large onion, cut in half, then sliced into half rounds
1 Tbsp taco seasoning OR:
1 tsp chilli powder
1 tsp granulated garlic
1⁄2 tsp paprika
1⁄2 tsp salt
12 hard taco shells or soft corn tortillas
Additional toppings:
Daiya mozza shreds (or other non-dairy cheese)

- Place a non-stick frying pan over high heat.
- When hot, add 1 tsp of oil, then add onions and peppers, stir frying until nicely charred.
- Remove mixture from pan & set aside.
- Heat 1 tsp oil over pan and add cauliflower, tossing occasionally until charred here and there.
- Add peppers and onions back to the pan, stirring to combine.
- Then add seasoning mix, along with 1⁄2 cup of water.
- Stir well, then leave to simmer on low heat until the rest of the ingredients are prepared.
