Filling
1 tsp sunflower oil
1 1⁄2 Tbsp apple cider vinegar
1 Tbsp maple syrup
1⁄4 tsp salt
2 cups finely shredded cabbage*
1⁄2 cup grated carrot
2 Tbsp finely diced white onion
Round rice paper wraps
Dipping Sauce
1⁄2 cup natural peanut butter
2 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp sesame oil
1 Tbsp fresh lime juice
1 tsp granulated garlic
1⁄4 cup warm water
- In a large bowl, whisk together oil, vinegar, maple syrup and salt.
Add cabbage, carrots and onion, stirring well to combine. Set aside. - For dipping sauce: whisk all ingredients together in a small bowl until no lumps remain.
- To prepare, set out a large water with warm water. Dip a rice paper wrapper into the water, then set out on a cutting board. Wait about 30 seconds.
- Spoon some dipping sauce in the center, then place about 1⁄4 – 1⁄3 cup of filling down the center.
- Wrap as directed on package, just like a burrito.
