Ingredients:
6 slices zucchini
2 slices favourite bread
butter
2 Tbsp Roasted Garlic Hummus
1/4 Avocado
10 thin strips Red Pepper
Red Onion, sliced
Small Handful Spinach
*Optional: Hot Pepper Rings & Daiya Mozza Cheese
Instructions:
Saute zucchini in a frying pan with a tiny drizzle of oil. Cook till golden brown, then sprinkle with salt & set aside. Set the frying pan on medium heat. Spread margarine on the one side of
each slice of bread. Stack slices, margarine together. Spread hummus on dry side of one slice. Press red peppers, onion, zucchini and hot peppers (if using) on top of hummus. Cover with spinach. Using a fork, mash avocado on top of spinach. Sprinkle with Daiya cheese (if using). Press remaining slice of bread on top of sandwich, then place sandwich into frying pan. (You
may want to press top slice on once it’s in the pan!). While cooking, press another sprinkle of Daiya cheese on top of sandwich. Once golden, carefully turn sandwich to grill the other side till golden. Enjoy with pickles or more hot pepper rings!
