3 medium carrots, peeled and chopped
1 large parsnip, peeled and chopped
1 Tbsp olive oil
1 tsp cumin seeds
1/2 tsp salt
1/4 tsp turmeric
1 tsp curry powder
Preheat oven to 375F.
Place vegetables in a large bowl. Drizzle with oil and sprinkle with spices. Stir or toss well.
Spread out evenly on a baking sheet. Roast for 40 – 45 minutes, stirring once. Remove from oven
when ready. Serve and enjoy!
