1/2 pint Grape Tomatoes
2 Tbsp Extra Virgin Olive Oil
1 Tbsp Balsamic Vinegar
Maldon Sea Salt Flakes
Fresh Ground Black Pepper
10 Fresh Basil Leaves
1/4 Cup Chevre (Soft Goat Cheese)
Preheat oven to 400F.
Cut tomatoes in half. Toss tomatoes with oil, salt & pepper. Place on a baking sheet. Roast for
about 20 minutes, or until tomatoes start to wrinkle and darken slightly. Meanwhile, spread goat
cheese on a plate. Sprinkle with basil leaves. Remove tomatoes from oven and place them over
the goat cheese & basil. Add more salt & pepper, if desired. Serve with crackers or fresh bread.
