Ingredients:
1 – 2 Tablespoons Olive Oil
1 teaspoon butter
1 medium sweet onion, diced
6 cloves garlic, minced
1 Tablespoon Ginger, finely grated
1 1/2 teaspoons cumin seed
1 dried red chilli pepper, crumbled
1 cup dried red lentils
2 cups hot water
1 teaspoon turmeric
1 Tablespoon curry powder
2 teaspoons ground cumin
1/4 teaspoon fresh ground black pepper
1 cup hot water
Salt to taste
1/4 – 1/2 cup canned coconut milk, to taste
Instructions:
Heat oil & butter in a large pot over medium-low heat. Sauté onions until they soften and become translucent. Add garlic, and cook until a few pieces turn golden brown and caramelize.
Add cumin seed, dried chilli, ginger and lentils. Stir till everything is well blended. Add 2 cups hot water and bring to a boil, then turn down to a simmer. Cook till water is almost completely absorbed into lentils. Add 1 cup hot water, along with turmeric, curry powder, ground cumin and black pepper. Stir and cover. Simmer until lentils are cooked. Approximately 20 minutes. Add salt and coconut milk to taste. Enjoy!
