< id="zlrecipe-ingredients-list">< id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">2 Tbsp olive oil < id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 cup onion, diced < id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">2 stalks celery, diced < id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">2 medium carrots, diced or sliced < id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 small potato < id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1 (398 mL) can pinto beans, rinsed and drained < id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 (398 mL) can diced tomatoes, with juice < id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1/3 cup zucchini, diced < id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1/2 cup dry rotini pasta (can be gluten free!) < id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">6 cups water < id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1 tsp each: granulated garlic, ground cumin, paprika, and oregano < id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">1/2 tsp salt < id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">pepper, to taste < id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">< id="zlrecipe-instructions-list" class="instructions">< id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Heat oil in a large pot on medium-low. < id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Add onion, celery & carrot, stirring occasionally. < id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Saute until veggies are tender. 5 - 7 minutes < id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add potato and saute for another 5 minutes. < id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Pour in beans & tomatoes, stirring well. < id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add water and spices, turn heat to high and bring to a boil. < id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Add zucchini and pasta. < id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Turn heat to a low simmer, and cook covered, for 20-30 minutes. < id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Add more seasoning, if desired. < id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">This soup tastes even better the next day!https://soulchange.co/2018/01/minestrone-soup/
