Eat right for your Root Chakra. This salad was particularly designed to balance the energies of the root chakra - plus it tastes amazing!

< id="zlrecipe-ingredients-list">< id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">2 cups Spring Greens < id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 pink grapefruit, peeled & segmented < id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 navel orange, peeled & segmented < id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 beet, peeled & boiled till fork tender (45 - 60 mins) < id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/4 of a Red Onion, sliced thinly < id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1/2 red pepper, cut into thin strips or rounds < id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">2 Tbsp Raw Pepitas < id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">Dressing: < id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1/4 cup Udo's Oil (or light Olive Oil) < id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1/4 cup fresh squeezed orange juice < id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1 tsp Orange Zest < id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">2 tsp mustard, any kind < id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">2 - 3 Tbsp Apple Cider Vinegar < id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">1 tsp fresh thyme leaves < id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">1/2 tsp sea salt < id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">< id="zlrecipe-instructions-list" class="instructions">< id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Lay greens on 4 plates. < id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Top with prepared fruits and vegetables. < id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">For dressing, place all ingredients in a screw top jar. < id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Shake very well. < id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Drizzle 2 -3 Tbsp over each salad. < id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Eat mindfully, preferably outside, or near a window. < id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Notes: Include some bitter greens such as dandelion, radicchio or frisee.
